Uccellina is an evolving creation – a work in progress we cherish like a ‘little one’ to nurture. Currently, it is a carefully tended plot of land, bathed in sunlight and revitalized to yield an oil with unmistakable, authentic character.
An oil born with wings
With an eye to the future and the meticulous care that defines our craft, Uccellina will soon give identity to the land where it’s taking root. Its name evokes the grace of a bird in flight—hinting at the oil’s light, delicate profile. A gentle oil with low acidity and balanced flavor, it will add new diversity to our olive oil range.
Uccellina will shine in golden yellow with vibrant green reflections. On the palate, we already envision it as fresh and lively, without overpowering bitterness or pungency.
